Beetroot Hummus

The Pink Stuff

This little dish has been a crowd pleaser since my mother made it. I think it was a spontaneous strike of genius awesome.


Beetroot, cooked. I prefer the canned variety,


Blend together in a blender. I prefer a VitaMix. They’re awesome. You’re looking for the correct consistency, so add the tahini to make it the correct thickness.

These are great with crackers, or chips, or falafel, or bread, or anything else awesome.
