Roasted Vegetable Roll

Not all vegan foods have to be difficult and confuddling to make. Sometimes it’s simple, easy and delicious!

Ingredients:

Lettuce,
Eggplant,
Zucchini,
Olives,
Fresh or sundried tomatoes,
Lebanese, or any flat bread of your choosing

Instructions:

Peel a couple of layers of lettuce.

Thinly slice eggplant, zucchini and tomatoes. Roast in pan until squishy and awesome-like. Adding a bit of Nuttelex to the pan will only increase the awesome factor. While slightly decreasing the health factor.

Grab a piece of bread. Layer with lettuce, then the roasted eggplant, zucchini, tomato. Put in some sliced olives. Roll into a sandwich.

Then… roast the whole sandwich again. This will slightly toast the bread, and slightly melt the lettuce a bit.

Try it out! Enjoy! If you have any changes to it, or things you like to add, let us know. I’ve tried this with a bit of Tofutti, and some mushrooms, too.
